The Toshiba LIbretto did something like this in the past.
I had one. It was novel but not very practical. Two displays are just more of a power drain, and the touch interface is pretty inefficient. I doubt very much that this is something Framework would take a risk on.

This is impractical because you cannot type accurately without looking at the keyboard. This is the same as car manufacturers use fake or “haptic” buttons instead of real mechanical buttons to cut corners.

Niche cases like this are great for someone to develop it independently. Nothing stopping someone from making a setup with even 3-4 touchscreens if they really wanted to it just does not have a large audience.
I mean hoping Framework Team have that products in the future.
