Installing current driver bundle keeps causing windows 11 install to become non bootable.
now on my 6th install of windows, have removed and disabled Mediatech WiFi card and updated BIOS to latest.

We are all end users here on the forums. Starting a ticket with support might be a good idea as they are the best resource for help with their machines.
The MediaTek WiFi card should not be preventing it from booting. Was this just some of the steps tried up to this point? (Bravo to you for getting up to the 6th time installing windows; not sure I would have that much patience!)
Is the installation media being used Windows 11 (24H2) or (25H2)? I know those are the latest builds and while previous builds should not be an issue, the AMD AI mainboards are really recent and maybe it does not get along well with previous Windows builds?
Maybe try to locate a previous driver bundle release and see if that makes a difference?
Personally, when installing Windows; after the OS is installed, rebooting the machine just to make sure any pending changes are committed to the drive may be a good idea. Just trying to think of options that would cause the system to become unbootable after installing the driver bundle.
When it says it is not bootable does it no longer show up as a bootable device? Does it try to start and just give a black screen of death now? Rebooting with the USB media; can it “Repair Windows” itself so it boots again?
Maybe try disabling secure boot? After updating the BIOS, did the defaults get loaded? (F2 to enter BIOS, and I think it is F9 or F10 to load optimized defaults) Not sure if there have been others posting that the driver bundle broke Windows 11 after installing on a fresh OS. Let us know how it goes.
So the suspect driver is AMD DRTM Boot Driver
