Is anyone working on an application to manage and interact with the wireless touchpad keyboard and its ZVK firmware? (Ex: easy GUI key remapping) I understand it may be difficult due to it not being released yet. I was wondering because I am interested in making one (once it comes out, they haven’t published the firmware yet, says TBD on the github) but figured I would check first to see if anyone is working on one or has plans to make one.

Yeah, you might want to hold on that plan. 
The firmware is ZMK. Open source keyboard firmware which has been around long before Framework decided to make their wireless keyboard.
I haven’t tried it myself, but I understand ZMK already has an easy GUI key remapping solution. zmk.dev/docs/features/studio

I read up on that over the past couple days.
Seems neat but I think I’ll still move forward with making one specifically for the framework one.
This is useful though, gives me something to build against and compare to, without going in blind.
I’m thinking like an interactive 3d render of the keyboard would be neat.
I’ll see what I can do.
