if I buy a laptop with international english keyboard, to replace it with an Italian one, I’ll need to buy the keyboard alone or the whole italian kit?

You could buy either the italian keyboard or the italian input cover. The input cover is more expensive, but much easier to install. If you would replace only the keyboard, you’d need to unscrew dozens of tiny screws and then fit them again with the new keyboard, which is a very boring and fiddly task.
